Apple Cinnamon Oatmeal

This recipe is from my new favorite blog, HappyHealthyMama.com. I love it because there is no added sugar, it is sweetened with fruit and yummy enough that my picky five year-old will eat it! It makes enough for about 4 adult size servings.

Apple Cinnamon Oatmeal

1 Cup Rolled Oats
1 Cup Skim Milk
1 Cup Water
1 Banana
1 Apple, peeled and diced
1 TBSP Cinnamon
2 TBSP Flax Meal
3 TBSP Raisins (opt.) ---I use Craisins

In a large saucepan over med. heat combine oats, milk and water. Add the banana in very thin slices (the thinner the better) and let cook while you prepare your apple. Place diced apple and raisins in a bowl with a small amount of water and microwave on high for 30 seconds, drain water and set aside.

Using a wooden spoon, stir oatmeal vigorously to whip the banana into the oatmeal. Stir until banana is well combined. Add cinnamon and flax. Stir in apples and raisins. Continue to stir and cook until oatmeal reaches the consistency you prefer.

If you are used to really sweet store bought instant oatmeal, you might need to sprinkle with cinnamon and sugar. But it really is plenty sweet on its own!
